A yufkacı is a Turkish yufka maker. Yufka (in the Balkans also called jufka) are thin, round dough sheets, rolled out with a long rolling pin (oklava) and briefly baked on a hot griddle (sac). Turkish families use them for börek, gözleme and dürüm. Fresh, handmade yufka is soft and flexible and bakes into crisp, flaky layers.

Is yufka the same as filo (phyllo) pastry?
Not exactly. Filo is raw and paper-thin and is mostly used for baklava. Yufka is a little thicker and already lightly baked, so it is ready to use for börek and wraps.
